Strawberry yoghurt trees

Further to the recent educational post regarding birds and planes, here is the less elegantly titled “I know it’s a car but what sort of tree” challenge, which again highlights my total ignorance regarding flora and fauna.

Here’s the car I spotted a couple of days ago:

Being an automotive anorak, I require no help to recognise this is an Aston Martin DB9 (and it had “DB9” on the back just in case I was uncertain). And now for the tree (or rather, trees):

“Tree” is as close I can get to a name. The trees are being tapped for something, maybe that helps:

Could be rubber, could be strawberry yoghurt as far as I know. Edification please, preferably provided without excessive mocking.
